Happy lil ❤’s are baking #20

What did you bake or cook with your kids this week?

Sunday morning for us means pancake breakfast!!
And at the moment we are enjoying Ricotta and Blueberry Pancakes ~ with Blueberry Sauce 
We use:
Pancakes
150g self raising flour
1 tsp bicarb soda
pinch of salt
40g caster sugar
125g ricotta
1 cup milk
1 egg, beaten
400g blueberries, tinned in juice
Sauce
40g caster sugar
Blueberry juice (leftover from the tin)

Mix together your dry ingredients before adding the ricotta, milk and egg.
Sieve your blueberries and slightly squish the berries as you go. 
Add the berries to your pancake mix.

Start cooking your pancakes on a moderate heat *smile*
Pour the juice from the blueberries into a small saucepan with 2 tablespoons of caster sugar.
Stir occasionally over low heat until it is almost a jam like consistency

Serve the pancakes with generous dollops of blueberry sauce *smile*

Have you noticed all the super yummy raw cookie dough recipes around lately??
We decided we had to try some *smile*
The recipe we used is from Kim from Mothering with Mindfulness
Kim has lots of great healthy recipes and they are all on our to-do list!

Master D enjoyed pouring the seeds and raw cashews in the mixer and whizzing them up

Next he added the dates…. taste testing as he went *smile*… as well adding some vanilla and cocoa (we couldn’t locate cocoa nibs before baking day, but have found them since)

We poured the mix out and starting working it with our hands…

{in case you weren’t aware, swords are the latest baking accessory?!}

These were super yummy and we will be making them again *smile*
