Happy lil ❤’s are baking # 11

Yesterday we baked a gorgeous raspberry pie for Pi Day!

We used:

 For the pastry
250g plain flour
100g icing sugar
125g butter
1 egg
dollop of sour cream

For the filling
500g raspberries
150g caster sugar

For the frangipane 
100g ground almonds
100g butter
100g caster sugar

Getting his ‘sillys’ out before getting down to the serious business of baking 😉
We started by making the pastry. We added all the ingredients to the mixer and whizzed them up. 
Then we popped it in the fridge to rest for 20 minutes.
After that I rolled it out and placed in in the pie dish before using a fork to poke holes all along the bottom. Then it was back into the fridge for another rest!

Master D lost interest with all this pastry resting business so went off to play (not surprising really!).

Once I got the raspberries started Master D quickly came back to join in the action, and to do a fair bit of taste testing *smile*. We cooked the raspberries and sugar until they seemed to have a good almost jam-like consistency.

Next we poured the raspberry filling into our pastry (and yes, we cheated by not blind baking it – I was assured by my mum that we could skip this step – thanks mum!). 

For the frangipane we mixed the sugar, almonds and butter together in the mixer and sprinkled them on top.


Then we popped the pie in the oven at 180°C (around 350°F) for 45 minutes. Then it was time to enjoy!

 

And enjoy we did!

  This was the first time we made pastry ourselves, and I must say it tastes amazing! I’m actually eating another piece of pie now and it is sooooo good 😉
